Ingredients

  • 500 grams lean ground beef
  • 2 capsicums, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cup brown rice, uncooked
  • 2 cups water
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • pepper, to taste
  • 1 tablespoon olive oil

Directions

  1. Cook brown rice according to package directions using 2 cups of water.
  2. In a large skillet, heat 1 tbsp olive oil over medium-high heat.
  3. Add ground beef and minced garlic to the skillet and cook until browned, stirring occasionally and breaking up any clumps with a wooden spoon.
  4. Add chopped capsicums, onion, and carrots to the skillet and cook until tender, stirring occasionally.
  5. Add cumin, paprika, salt, and pepper to the skillet and stir to combine.
  6. Once the rice is cooked, add it to the skillet with the beef and vegetables. Stir everything together until well combined.

  • 1/4 tsp salt
  • 2 tbsp unsalted butter
  • 1 egg, beaten
  • 1 9-inch pie crust (homemade or store-bought)

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and slice the apples into thin wedges.
  3. In a large bowl, mix together the sugar, flour, cinnamon, nutmeg, and salt.
  4. Add the sliced apples to the bowl and toss until they are evenly coated with the sugar mixture.
  5. Roll out the pie crust and place it in a 9-inch pie dish.
