It’s Italian National day on Wednesday, so why not inject a slice of La Dolce Vita into your workweek with The Business Lunch at BASTA? Brunching is officially back, and DIFC gastronomic haven Roberto’s has set the tone for the summer season with the relaunch of its legendary weekend brunch, a three-course extravaganza of modern Italian dishes served both sharing style and à la carte.

Brunch begins with a mouth-watering selection of warm and cold antipasti including tuna tartare, classic burrata, and slow-cooked roasted octopus in addition to the pasta course of homemade fettuccine with Canadian lobster and wild forest portobello mushroom risotto with shaved black truffle. With the main event including Wagyu tagliata and oven-baked sea bass in sea salt crust accented by a sharing plate of desserts and a live DJ creating the perfect weekend soundtrack, we can’t think of a better place to restart our favourite Friday (and Saturday!) activity.

Classic Apple Pie

To make a classic apple pie, you’ll need:

Ingredients

  • 6-7 medium-sized apples (Granny Smith or Honeycrisp work well)
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 tbsp unsalted butter
  • 1 egg, beaten
  • 1 9-inch pie crust (homemade or store-bought)

Directions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, core, and slice the apples into thin wedges.
  3. In a large bowl, mix together the sugar, flour, cinnamon, nutmeg, and salt.
  4. Add the sliced apples to the bowl and toss until they are evenly coated with the sugar mixture.
  5. Roll out the pie crust and place it in a 9-inch pie dish.
  6. Pour the apple mixture into the pie crust and dot the top with small pieces of butter.
  7. Roll out the second pie crust and place it on top of the apples. Crimp the edges to seal the pie.
  8. Cut a few slits in the top crust to allow steam to escape.
  9. Brush the top of the pie with the beaten egg.
  10. Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  11. Let the pie cool for at least 30 minutes before serving.

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 medium-sized apples, peeled and diced
  • 1/4 cup caramel sauce

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter.
  3. Press the mixture into the bottom of a 9×13-inch baking dish.
  4. In a separate bowl, beat the cream cheese and 1/2 cup sugar until smooth.
  5. Add in the eggs and vanilla extract, and beat until well combined.
  6. Pour the cream cheese mixture over the graham cracker crust.
  7. Sprinkle the diced apples over the top of the cream cheese mixture.
  8. Drizzle the caramel sauce over the apples.
  9. Bake for 30-35 minutes, or until the edges are golden brown and the centre is set.
  10. Let the bars cool before slicing and serving.
